Anyone got a recipe for non dairy ice cream?

i used to have a good recipe for a berry one, but i can't find it :mad:
alpro yoghurt's dairy free - i think they sell it in brixton wholefoods..: (they also sell dairy-free icecream there if you have any recipe disasters :D).

the vegan society's got a fairly easy looking variation for banana ice cream:

6 bananas
1 floz (25 ml) lemon juice
18 floz (2 x 250 ml) soya custard
9 floz (250 ml) soya milk

1. Slice bananas and put into container with lemon juice. Freeze for four hours or overnight.
2. Blend the custard and milk with the frozen fruit in a food processor. Return to container and freeze until needed. Take out of the freezer 20 minutes before service.

dairy-free custard's fairly easy to find in larger supermarkets - again, it's alpro i think).

Here's my favourite vegan one:

Dark Chocolate Vegan Ice Cream

180g dark chocolate (70% cocoa solids)
100g castor sugar
3 tablespoons creme de cacao (optional)
Either: small bunch fresh mint
Or: small pinch dried chilli flakes

Put the chocolate, caster sugar, mint or chilli flakes if using, and 200ml water in a heatproof bowl set over a saucepan of simmering water, or microwave on high for one minute. Add the creme de cacao if using (and it does make it super-chocolately), allow to cool completely.

Churn in an ice cream machine, or freeze in a tupperware container, removing it to beat frequently before returning to freezer. If you are using mint instead of chilli, chop it very finely and stir in when the ice cream is nearly frozen.
 
Would sorbet be an option? :hmm:

Not on this occasion; I wanted something to go with some glazed pears with apple syrup that I'll be making on the day - and having admitted to me that she likes but misses ice cream, I thought I'd have a go at making some to go with it.

I like lemon sorbet too - but I don't think that will go with everything else.
 
I make non-dairy ice cream all the time!

Do you have an ice cream maker?

Coconut milk is the answer.

Here's one that I made yesterday:

1 can of lite (full fat also works) coconut milk
1 small-ish butternut squash, roasted w/a little olive oil, cut into chunks

blend coconut milk and squash with cinnamon and vanilla in a food processor

dump into ice cream maker as per instructions

enjoy

I have also made ice cream with coconut milk using a double boiler first, adding eggs for texture and making it custard-like before freezing

I've used cinnamon, dried vanilla bean, cardamom, blueberries, bananas, peaches, cacao...just about anything.

Ice cream makers are FANTASTIC.

I don't use sugar either and it's always sweet enough even for my sugar-eating friends.

Seriously, though, coconut milk is GREAT.

Vice Cream -
all the recipes in it require an ice-cream maker and most of them use cashew nuts (tho some of them use coconut milk like the recipe in D's post) I'm quite impressed with the results - my favourites so far are these
Peanut Butter - 1 cup cashews, 2 cups of water, 1 cup maple syrup, 2 teaspoons vanilla essence, 1 cup peanut butter - just bung everything in a blender till smooth then put into your ice cream maker.
Lemon 2 cups cashews, 1 and a quarter cups water, 1 cup maple syrup and 1 cup lemon juice - and as with the first recipe you just blend and then put into the ice cream maker.
I'm planning on trying the apple cinnamon one soon. - 3 cups apple juice, 1 cup cashews, half cup maple syrup and 1 teaspoons cinnamon power:cool:

anyway the advice obviously worked because we've been together just over 2 years now and getting married soon :)

By the way... there's an easy option, "Swedish Glace" is available in supermarkets made with soya milk. I can get the vanilla one in Tesco, but I've also found a raspberry and neapolitan one in Waitrose.

They also have a chocolate one in Holland and Barrats. They used to do mini magnum style ones as well, haven't seen them for a while though :(

there's no such thing as non-dairy ice-cream
If it looks like ice cream, tastes more or less as creamy as cheap ice cream does, has a texture like ice cream, and a similar melting point, then what short name would you give it instead?

I'd agree about the vegan cheese (probably a lot of vegans would too), and the vegetarian bacon... but the choice of dairy free iced dessert made by ajdown was for somebody with the sheer bad luck to be unable to eat dairy products without suffering afterwards. Perfectly reasonable for her (and others like her) to crave a not-quite ice cream.

Next you'll be telling me that I should give up Chinese food unless I'm willing to have onions, spring onions, and/or leeks in it.
 
<shrugs> Hey, I can still have garlic, it's not the end of the world. :) If you ever get the time, have a look at the range of pickles & sauces done by Anila (who I think is a Jain) - tangy, spicy, authentic, some blisteringly hot, but no onion or garlic at all unless you add them.

But it does give me some understanding of how much you'd have to love somebody to give up cooking with what you believe is a key ingredient (even if not changing your own diet), and maybe even relearn how to cook. IME very few people bother. FWIW life without migraines (considering how similar to a really violent & nasty drunk I can get if I don't block an attack in time) or life with onions - easy choice to make.
